It's a baby wine, smells fresh like sliced green apples sitting in a nest of spring flowers.

Will it keep?

With this kind of refined acidity, yep, it will but you'll be hard pressed not to drink it immediately.

Quaff it with salt 'n pepper calamari or as we did with Japanese style chicken meatballs with soused carrots and cukes. Keep it longer and try it with a Gruyère soufflé.
