The Hunter produces excellent whites: Semillon and Chardonnay being the most familiar, Verdelho a bit less so.

Albariño?

Practically nada.

Spain's most interesting white variety, it remains scarcely planted in Australia.

This one from consistently good Margan Estate is one of the best iterations made in Australia.

If you like pork, try this with a crisp schnitzel and a mustard sauce, fried potatoes on the side.

An oily fillet of fresh mackerel with a caper butter sauce would suit it well too.

Kefalograviera cheese ready for saganaki?

Mop up the lemony juices with good crusty bread.

Hell! Even sardines on toast would pair perfectly.
