See Saw Balance 2023 Chardonnay

See Saw of the cool climate Orange region located on the slopes of Mt Canobolas, is emblematic of Australia's trend towards minimal intervention wine making.

Owners Justin and Pip Jarrett express their attitude to organic grape growing through Chief Seattle's prophetic words, "We don’t inherit the earth from our ancestors, we borrow it from our children.”

Their 2023 Balance Chardonnay is an excellent example of how good their wines are.

You know Chablis?

This is an Aussie version.

Clean, crisp, fine and elegant. Green apples keynote the overall bouquet. A lengthy finish shows up talent in the winery.

Some organic wines can err on the side of too funky. Not this one.

We could drink a lot of this delicious stuff.

Paired with a French fish soup redolent with saffron, it sang a rousing chorus.

It held up well against a smoky ham and bean stew à la cassoulet.

Oysters? Mussels? Prawns?

However prepared this wine would seductively see saw smack into your taste buds.

Roast chicken with mushrooms and truffles?

There's a winter prize winner.

Duck paté en croute would match this wine, the acidity cutting right across the ducky fattiness.

A dry hard cheese like aged Comté or Parmigiano Reggiano also provide clever foils to this refreshingly crisp Chardonnay.
