Robert Oatley Great Southern 2022 Riesling

Rieslings from WA's southwest region always rate highly among the country's best and rightly so.

They strike the vino trifecta: complex, full bodied and delicious.

This Oatley Riesling is exquisitely balanced between high strung acidity and beautiful length.

It will age well but it's drinking a treat right now.

We paired it with a version of oysters Rockefeller enhanced by a touch of fresh horseradish, a dish that poses challenges this Riesling met and triumphed over.

On the rock theme, rockling fillet poached in a rich coconutty Thai yellow curry sauce with tiny bitter aubergines would bring out the best in each other.

Similarly, a trad crispy pork Cantonese sweet 'n sour with pineapple, capsicums, carrot, garlic and onion would work smooth as silk.

Kingfish crudo with lots of lemon, EVOO and a scattering of capers would make fond friends.

So too simple fried veal scallopine with the same.

A bit heavier? Ocean trout cooked in parchment with fennel, roast tomatoes, tapenade and pickled lemon with steamed new potatoes.

This is truly an impeccably made wine that demands the best cooking you can do.
